Diary Entry: Why We Call Them “Cloud Rings” ☁️🍤

At Sawaan Thai Kitchen, we believe that every dish should tell a story—not just through taste, but through its name and appearance. One of our most beloved appetizers is something you might know as Tod Mun Goong (ทอดมันกุ้ง), but on our menu, we call them Cloud Rings.

The Inspiration

Since “Sawaan” means Heaven, I wanted our appetizers to feel like a journey through the clouds. When we were designing the menu, I looked at the golden, crispy, circular shape of our shrimp cakes and thought they looked like little rings floating in a golden sky.

As someone who loves installation art, I see the plate as a canvas. The name “Cloud Ring” bridges the gap between traditional Thai street food and the artistic atmosphere we’ve created here in San Francisco.

What Makes a Cloud Ring?

While the name is whimsical, the recipe is strictly “Thai-Thai.” To get that “heavenly” texture, we focus on two things:

  • The Crunch (The Silver Lining): We use a special breading technique to ensure the outside is light, airy, and incredibly crispy—just like the edge of a bright cloud.
  • The Bounce (The Soul): Inside, you’ll find 100% succulent shrimp, hand-minced and seasoned until it has that perfect “bouncy” texture (Deng เด้ง) that authentic Thai shrimp cakes are famous for.

A Heavenly Pairing

We serve our Cloud Rings with a sweet and tangy plum sauce. The contrast between the savory, warm shrimp and the cool, sweet sauce is exactly what we mean when we say “Aroy muen dai kuen sawaan (It tastes like heaven).

Abid’s Design Tip

Look at the color! The deep golden brown of the Cloud Ring against the vibrant colors of our tableware is a deliberate choice. We want the “visual hunger” to hit you the moment the plate touches the table.
